Tarragon Chicken Salad

Tarragon Chicken Salad has a unique flavor that will be pleasing to your taste buds. Tarragon adds a subtle licorice flavor to the mayonnaise dressing. The yellow summer squash, carrots and celery give it a delightful crunch. This is a good chicken recipe to use up your leftover chicken. To keep things cool in your chicken you can always buy a rotisserie chicken from your favorite market.

You will want to add this to your recipes keeping in mind that it's also low-calorie. I use a spring mix (mesclun) for my greens, but you may choose a variety of your favorite lettuces and greens.

Start with:

1/2 c. low-fat mayonnaise
3 tbsp. white balsamic or white wine vinegar
1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. fresh ground black pepper
2 c. cooked chicken, chopped
1/2 c. red onion, finely chopped
1/2 c. yellow summer squash, chopped
1/3 c. carrots, chopped
1/3 c. celery with leaves, chopped
1 tbsp. fresh tarragon leaves, chopped
1 bunch (about 5 oz.) spring mix (mesclun)

  1. Whisk together mayo, vinegar, salt, sugar and pepper in a small bowl until smooth
  2. Combine chicken, red onion, squash, carrots, celery adn tarragon in large bowl. Add mayo mixture and stir until blended.
  3. Divide salad mix and Tarragon Chicken onto 4 serving plates.
