Sour Cream Apple Pie

- 2 eggs
- 1 c. sour cream
- 1 c. sugar
- 6 tbsp. all-purpose flour, divided
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 3 c. chopped and peeled Jonathan Apples
- 1 - 9 in. unbaked pie crust
- 1/4 c. packed brown sugar
- 3 tbsp. cold butter
In a large bowl, beat eggs. Add sour cream, sugar and 2 tbsp. flour and salt. Mix well. Stir in apples.
Pour into pie crust and bake at 375° F. for 15 minutes.
While pie is baking, combine brown sugar and remaining flour. Cut in cold butter until mixture is crumbly.
Remove pie from oven and sprinkle brown sugar mixture over to of pie. Return to oven for 25 - 30 minutes or until filling is set.
Remove from oven and let cool completely on a wire rack.
