Pesto Sauce is one of the simplest and richest toppings for your pasta. The original pesto was make in a mortar and pestle, whence the name "pesto". Today, with the help of a food processor, it can be made quickly and easily.
Recipe for pesto sauce don't vary much, but one essential thing is the same in this pasta sauce, use fresh basil leaves. When making this sauce I recommend using high quality olive oil and freshly grated Parmesan cheese.
This is one of my favorite recipes and after you try it, it may be one of your too.
2 c fresh basil leaves
3 large garlic cloves
1/2 c. freshly grated Parmesan cheese
2 tbsp. freshly grated Pecorino Romano cheese
1/4 c. pine nuts or walnuts
1/2 c. olive oil
Salt and freshly ground pepper to taste
Yields: About 1 cup (4 servings)
Combine the basil, garlic, cheeses and nuts in a food processor or blender. Process to mix. With the machine running, slowly add the olive oil. Season with salt and pepper and continue processing to the desired consistency. Let it stand for about 5 minutes.
Thin with a few tablespoons of cream or hot pasta cooking water before tossing with hot pasta. I recommend fettuccine or linguine with this sauce.
