Oven Fried Chicken Recipe

8 boneless, skinless chicken breast halves
2 egg whites
1/2 c. skim milk
1/2 c. all purpose flour
1 tbsp. paprika
1 tsp. dried basil leaves, crushed
1/2 tsp. salt
1/4 tsp. black pepper
1 c. dry bread crumbs, finely crushed
1/4 c. vegetable oil

Heat oven to 425 ° F. Rinse chicken breasts and pat dry with paper towels.

Beat egg white until frothy. Beat in milk. Combine flour, paprika, basil, salt and pepper in a large plastic resealable bag. Place breadcrumbs in another resealable bag. Dip chicken breasts in flour mixture, then in egg whites, then in crumbs.

Place oil in a jelly roll pan or other shallow pan and place in oven for 3 - 4 minutes or until oil is hot, but not smoking. Add chicken breasts in single layer.

Bake for 10 minutes. Turn chicken over and bake for additional 10 minutes or until chicken is done and tender. Yields 8 servings.
