Jerk Spiced Grilled Shrimp
If you want something different for your barbecue, try this Jerk Spiced Grilled Shrimp. Serve it with Pineapple Mango Salsa (recipe below) and your guests will think you spent all day preparing for your 4th of July celebration.
It's an easy shrimp recipe you can prepare in minutes. The jerk spice is made of things that you probably have on hand. If you're missing an ingredient for this spicy grilled shrimp, it will worth your time to run out and get it.
1 tbsp. sugar
1 tbsp. paprika
1/2 tsp. salt
1/2 tsp. ground red pepper
1/2 garlic powder
1/4 tsp. ground thyme
1/8 tsp. ground allspice
2 tbsp. olive oil
1 1/2 lbs. peeled and deveined large shrimp.
Prepare your grill to medium-high-heat.
Combine first 7 ingredients. Toss shrimp with olive oil in large bowl until well coated. Sprinkle spice mixture over the shrimp and toss to coat. Thread shrimp onto skewered. (You can add fresh pineapple chunks to your skewers for a refreshing addition.)
Place skewers on grill rack coated with cooking spray. Grill for about 6 minutes or until done, turning once. DO NOT OVERCOOK!
Serve this refreshing Pineapple Mango Salsa on the side to tame the fire of spice on this grilled shrimp recipe.
Combine 2 cups chopped fresh pineapple, 1 diced mango, 1/2 cup chopped cucumber, 1/2 cup sliced red onion, 2 tablespoons chopped fresh cilantro and 2 teaspoons of cider vinegar.
Served with brown rice, it makes a delicious dish to serve at your 4th of July celebration.
