Holiday Cutout Cookies are my grandson's favorite because he loves to cut them out and decorate them. There are all kinds of different shapes you can use to make these Christmas cookies. Christmas trees, stars and wreaths to name a few. Holiday Sugar Cookies are lightly sweet and make a colorful addition to your holiday baking. Make it a family affair and have the whole gang participate in making these cookie recipes.
1 c. butter, softened 1 c. sugar 2 eggs 2 tsp. vanilla extract 2 1/2 c. all purpose flour 1/2 tsp. baking powder 1/2 tsp. salt Royal Icing (recipe follows) Assorted candies for decorating
Beat butter, sugar, eggs and vanilla in large bowl until well blended. Stir flour, baking powder and salt together then add to butter mixture. Mix well.
Divide dough in half. Cover and refrigerate 1 - 2 hours or until firm enough to handle. Preheat oven to 400° F.
Roll each half, on a lightly floured surface, to about 1/4" thickness.
Cut into shapes using your holiday cookie cutters. Place on ungreased cookie sheet.
Bake 6 - 8 minutes or until edges are firm and bottoms are very lightly browned. Remove from oven and cool completely on wire rack.
Decorate to your hearts content.

Beat 2 egg whites in medium bowl until peaks just begin to hold their shape. Add 2 cups sugar and the lemon juice; beat for about 1 minute. If consistency is too think for piping, gradually add more sugar until you get desired result. If too thick, add another egg white. Divide icing among several small bowls and tint to desire colors. Keep bowls tightly cover until you are ready to use it.
This recipe is easily adjusted to make the amount you want.
