Creamy Potatoes with Caramelized Onions

A friend of mine came up with this recipe for Creamy Potatoes with Caramelized Onions and I have loved them ever since I tried them the first time. The mashed potatoes with sweet onions and cream cheese make an irresistible dish.

This is one of my best mashed potato recipes and it goes so well with any main dish. To make my Easter dinner a little more special, this dish is an absolute must. Who can resist mashed potatoes?!

4 large potatoes, peeled and cut into small pieces
1/4 tsp. seasoned salt
8 tbsp. butter, divided
1/3 c. chopped onion
1/3 c. brown sugar, packed
1/3 c. sour cream
1/4 c. half-and-half
2 oz. softened cream cheese
1/2 tsp. salt
1/4 tsp. ground pepper

Place potatoes in a large pan and cover with water. Add seasoned salt. Bring to a boil, reduce heat, cover and cook for 15 - 20 minutes or until potatoes are tender.

Meanwhile, in a small skillet, melt 4 tbsp. butter. Add onion and cook until slightly softened. Add brown sugar and cook until brown sugar is bubbly and onion is tender.

Drain potatoes and place in a large mixing bowl. Add the sour cream, half-and-half, cream cheese, salt and pepper and remaining butter. Mash until smooth and creamy. Stir in onion mixture.

Once you try this mashed potato recipe you may never go back to plain mashed potatoes again. These make a wonderful dish for many of your special occasion meals. Take them to a pot luck and watch them disappear!
