Skinless, boneless chicken breasts are prepared with a creamy, sweet-savory sauce. Don't become alarmed if the sauce starts to separate after you add the apples and half-and-half; it will smooth out as it simmers.
1 tbsp. olive oil
4 boneless, skinless chicken breasts halves
3/4 tsp. salt
1/2 tsp. dried thyme
1/2 ts. black pepper
2/3 c. apple cider
3 c. thinly sliced peeled Braeburn apples
3/4 c. half-and-half
Heat oil in a large skillet over medium-high heat. Sprinkle chicken with salt, thyme and pepper. Add chicken to pan. Cook 5 minutes on each side or until done. Remove chicken from pan and keep warm.
Add cider to pan, scraping pan to loosen browned bits. Reduce heat to medium-low. Cook until reduced to 1/3 cup.Add apple and half-and-half. Simmer over low heat 10 minutes or until sauce thickens and apple is tender (not mushy), stirring occasionally. Serve sauce over chicken.
