I've always loved Chicken Marsala, so when I found this recipe I was thrilled. It's an easy recipe for Chicken Marsala that has graced my dinner table a few times over the years. And I'm sure you will find that the ease of preparation this recipe offers will make it one of your favorite recipes for chicken.
Served with a crusty bread and a bottle of your favorite wine, Chicken Marsala makes for an elegant meal.
1/2 c. dry Marsala wine
1 tsp. cornstarch
1/2 tsp. dried tarragon
1/4 c. Italian-seasoned breadcrumbs
2 tbsp. grated Parmesan cheese
1/8 tsp. garlic powder
4 - 4 oz. skinless, boneless chicken breast halves
2 tsp. olive oil
2 c. hot cooked angel hair pasta
Combine first 4 ingredients in a 1-cup glass measure, stirring with a whisk until blended.
Combine breadcrumbs, cheese and garlic powder in a shallow dish, stir well. Dredge chicken in breadcrumb mixture.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook 4 minutes on each side or until done.
Microwave wine mixture on HIGH for 30 seconds or until slightly thick, stirring once. Pour over chicken and simmer for just a few minutes. Serve chicken over angel hair. Yields 4 servings.
