These Chicken Fajitas are made with marinaded chicken breasts that are cooked on a charcoal grill. Most ingredients you will have on hand so this recipe for chicken will be an easy one to prepare. You may have to go out and buy your beer not that's not a problem is it?
You can't get a more delicious recipe for Chicken Fajitas from any national chain. The grilled flavor of the chicken with the homemade marinade will turn heads when cooking. I sauteed peppers from my garden and onions and mushrooms to add to this easy chicken recipe even though it didn't call for them. They added a lot of flavor. I put a little of the marinade in the saute pan.
My son Ryan loves a certain south of the border chain restaurant, but he will certainly love my homemade Chicken Fajitas more!
- 2 whole boneless chicken breasts, skin on
- Juice of 2 limes
- 2 large garlic cloves, minced
- 1/4 c. fresh cilantro, chopped
- 2 tbsp. mesquite smoke flavoring
- 1/4 c. beer (no matter if it's flat)
- 2 tsp. Worcestershire sauce
- Dash of Tabasco or other hot-pepper sauce
- 3 tbsp. vegetable oil
- 8 small flour tortillas, heated

- Guacamole (click here for my recipe)
- Sour cream
Rinse the chicken breasts and pat dry with paper towels.
In a small bowl, combine the lime juice, garlic, cilantro, smoke flavoring, beer, Worcestershire sauce, Tabasco sauce and oil. Slip the chicken breasts into a large zip-style plastic bag, pour in the lime juice mixture, seal the bag and shake to coat chicken. Marinate chicken for fajitas overnight.
Prepare your grill.
Remove the chicken breasts from the marinade, reserving the marinade. Place the chicken, skin side down on the grill. Cover, position the top and bottom vents three-quarters open, and grill for 8 minutes, basting with the reserved marinade. Turn, recover and grill on the second side, basting occasionally until cooked through.
Remove the chicken from the grill. You may remove the skin at this point, if desire. Thinly slice the chicken while it is still hot.
Place about 1/4 c. of the chicken in each warmed tortilla. Top with salsa, guacamole and sour cream. Wrap like a burrito and serve at once.
