Broccoli Supreme is a delicious side dish for your holiday meal or just anytime. Whereas, the usual broccoli casserole has cheese, the bacon and water chestnuts add flavor and crunch to this recipe without adding fat and calories from cheese. Several years ago I was looking for a different recipe for broccoli when I ran across this one that was given to me by a old friend. It's written on a piece of paper and was tucked in a cookbook. I'm glad to have found this recipe as it will be a part of my holiday meal.
|6 strips bacon, crumbled|
1/4 c. chopped onion
1 - 5 oz can water chestnuts, sliced and drained
1 can mushroom soup
|2 pkg. frozen chopped broccoli, cooked|
1/2 tsp. salt
1/2 c. Ritz crackers, crushed
pepper to taste
Fry bacon until crisp. Add onion and cook until transparent. Add water chestnuts and soup. Toss with broccoli. Add salt and pepper. Top with cracker crumbs.
Bake at 325° F. for 30 minutes or until set and crackers are toasted brown.
