Berry Peach Cobbler

Fresh peaches and berries make this Berry Peach Cobbler a delicious, juicy dessert that everyone will love. Blueberries, blackberries and peaches make this cobbler a delectable delight for your taste buds. This cobbler recipe is a dropped topping style. I love lots of crust so I sometimes use a bottom crust in my cobbler recipes. If fresh fruit is not available, frozen can be substituted.

For filling:

  • 3 - 6 oz. packages fresh blueberries
  • 3 - 5.6 oz. packages blackberries
  • 3 medium peaches, peeled and sliced
  • cooking spray
  • 2/3 c. granulated sugar
  • 2 1/2 tbsp. cornstarch
  • 3 tbsp. fresh lemon juice

For topping:

  • 1 c. flour
  • 1/4 c. granulated sugar
  • 2 tbsp. cornstarch
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 6 tbsp. chilled butter, but into small pieces
  • 1/2 c. half and half

Preheat oven to 350° F.

Combine all fruit in a 13x9 baking dish lightly coated with cooking spray. Sprinkle 2/3 cup sugar, 2 1/2 tbsp. cornstarch and lemon over fruit. Toss to combine.

For topping, combine flour, 1/4 cup granulated sugar, 2 tbsp. cornstarch and baking powder. Stir well. Cut butter into flour mixture until it resembles coarse meal. Add half and half; knead gently until moistened. Drop dough by spoonfuls evenly over filling.

Bake for 50 minutes or until topping is browned. Remove from oven and let stand for 15 minutes.
