Tortellini Pasta Salad



Tortellini Pasta Salad is colorful and full and zesty flavors. The multi-color cheese tortellini, fresh broccoli and cherry tomatoes make this pasta salad pleasing to the eyes as well as the tastebuds.

You may use a prepared Italian salad dressing or make this recipe for Italian Vinaigrette:

  • 1/2 c. extra virgin olive oil
  • 4 tbsp. red balsamic vinegar
  • 2 tsp. each, fresh thyme, basil and minced garlic
  • 1 tsp. Dijon-style mustard

To make this Tortellini Pasta Salad you will need to have:

1 - 7oz. pkg. of multi-colored cheese tortellini
1 c. fresh broccoli florets
1/2 c. fresh parsley, chopped
1 - 6 oz. jar of marinated artichoke hearts, undrained
2 1/2 tsp. fresh basil, chopped
1/2 tsp. garlic powder
1/2 c. Italian Vinaigrette
Cherry tomatoes, use as many as you like)
Black olives, sliced (use as many as you like)
Shredded Parmesan cheese, to taste

Cook tortellini to desired temderness as directed on the package. Drain. In a large bowl combine all ingredients except tomatoes and cheese. Cover and refrigerate 4 - 6 hours (or overnight). Before serving, add tomatoes and cheese.

This is better if you set it out about 15 - 30 minutes before serving.
