Tarragon Chicken Salad
Tarragon Chicken Salad has a unique flavor that will be pleasing to your taste buds. Tarragon adds a subtle licorice flavor to the mayonnaise dressing. The yellow summer squash, carrots and celery give it a delightful crunch. This is a good chicken recipe to use up your leftover chicken. To keep things cool in your chicken you can always buy a rotisserie chicken from your favorite market.
You will want to add this to your recipes keeping in mind that it's also low-calorie. I use a spring mix (mesclun) for my greens, but you may choose a variety of your favorite lettuces and greens.
1/2 c. low-fat mayonnaise
3 tbsp. white balsamic or white wine vinegar
1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. fresh ground black pepper
2 c. cooked chicken, chopped
1/2 c. red onion, finely chopped
1/2 c. yellow summer squash, chopped
1/3 c. carrots, chopped
1/3 c. celery with leaves, chopped
1 tbsp. fresh tarragon leaves, chopped
1 bunch (about 5 oz.) spring mix (mesclun)
- Whisk together mayo, vinegar, salt, sugar and pepper in a small bowl until smooth
- Combine chicken, red onion, squash, carrots, celery adn tarragon in large bowl. Add mayo mixture and stir until blended.
- Divide salad mix and Tarragon Chicken onto 4 serving plates.
