Swiss Steak

I found this recipe for Swiss Steak that is quick and easy to prepare. I modified it a bit to suit my taste. My family loves it.

Swiss steak with potatoes and salad

Start out with a nice lean cut of round steak or flank steak, simmer it for a couple of hours, serve it with mashed potatoes and salad and you have a delicious meal.

Pound 6 tbsp. seasoned flour (I use flour with salt and pepper, but you can add any seasonings you like.) into sides of a 2 lb. round or flank steak (about 1 1/2" thick). Brown in hot fat in heavy skillet. Add...

2 c. cooked tomatoes (1 large can of diced tomatoes)
2 onions, sliced
2 medium green bell peppers, sliced
1 stalk celery, diced

Cover. Cover and cook in a 300°F oven for 2 to 2 1/2 hours or until steak is tender. Uncover last 1/2 hour to cook down sauce to a rich thickness.
