Sweet Potato Chips
Do you like sweet potatoes? Then you will love Sweet Potato Chips. They are a delicious alternative to your typical potato chips. The outer crust is cheesy and crisp. Sweet Potato chips are a good snack or part of a outdoor barbecue. Served them with the sweet and sour dipping sauce and they will disappear before your eyes.

The sweet potato is a member of the morning glory family, and is not related to the yam.
For this unique snack you will need: 2 tbsp. olive oil 1 large sweet potato, cut into 1/4 in. thick slices 1/2 tsp. coarse sea salt 2 tbsp. unsalted butter 1 c. ground whole-wheat bread 1/2 c. grated Parmesan Cheese Fresh ground pepper
Heat oven to 500°F. Pour the oil into a baking pan and add the sweet potato slices. Turn the slices in oil to coat. Arrange in a single layer and sprinkle salt over top. Roast for about 20 minutes until softened and browned. Melt butter in a large skillet over low heat. Add bread crumbs and toast until a golden brown. Add the potato slices, Parmesan cheese and a few grinds of black pepper. Return potatoes to the baking dish and bake until the cheese bubbles. About 4 minutes.

Sweet and Sour Dipping Sauce- 1 sm. can pineapple juice
- 1/3 c. vinegar
- 1/3 c. brown sugar
- 1/3 c. ketchup
- 1 1/2 tbsp. cornstarch
- 1/4 tsp. mustard powder
- 1/2 tsp. garlic powder
- 2 tsp. Worchestershire sauce
- 1/2 tsp. ground pepper
Whisk all together in a sauce pan and cook over medium heat until thickened.
