Spiced Roast Chicken

This Spiced Roast Chicken recipe is an easy way to add pizazz to your ordinary chicken recipe. Serve it with a Nutty Rice Pilaf and a vegetable and BAM! you have a great dinner that took little time to prepare.

On the healthy side, this Spiced Roast Chicken is much lower in fat and cholesterol than other types of meat, making easy chicken recipes great sources for protein and other vital nutrients.

Spiced Roast Chicken on a Platter
  • 1 - 4 to 5 lb. roasting hen
  • 2 tbsp. ground cumin
  • 2 tbsp. chili powder
  • 1 tbsp. crushed coriander seeds
  • 1 tsp. ground cinnamon
  • 2 tbsp. brown sugar
  • 1 tsp. salt
  • 1 tsp. crushed red pepper flakes
  • fresh ground black pepper
  • 1/4 c. unsalted butter, melted

Preheat oven to 450° F. In a small bowl, combine the cumin, chili powder, coriander, cinnamon, brown sugar, salt, crushed red pepper flakes and black pepper. Mix well. Starting at the breastbone loosen the skin gently, careful not to tear skin. Loosen skin around legs and thighs as well. Rub the spice mixture on the meat under the skin. Salt and pepper the outside of the chicken to taste

Place the chicken on a rack inside a roasting pan. Roast for 30 minutes, basting with melted butter every 10 minutes. Reduce oven temperature to 325° F and continue baking for another 30 minutes or until the juices run clear. Remove from oven and let sit for about 10 minutes before slicing and serving.
