Souffle Potatoes


Souffle Potatoes might sound fancy, but this is one of those quick and easy potato recipes. But that doesn't mean that's it not an impressive vegetable dish. Using mashed potatoes and whipped egg whites this recipe comes out light and delicious.

  • 3 large egg whites
  • 3 c. mashed potatoes
  • 1 c. cottage cheese
  • 1/2 c. fat-free sour cream
  • 3 tbsp. grated onion
  • 3 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Preheat oven to 350° F. Coat a 2-quart baking dish with nonstick cooking spray.

In a bowl beat egg whites until they form stiff peaks. Set aside.

In another large bowl, combine mashed potatoes, cottage cheese, sour cream, onion, garlic, salt and pepper. Beat for about 4 minutes or until light and fluffy. Gently fold the beaten egg whites into the potato mixture.

Gently spoon the mixture into the baking dish. Bake for 1 hour or until slightly puffed and golden. Serve immediately.

Serves 8.

Note: It's natural for the souffle to slightly fall after a few minutes.
