Rhubarb Grilled Chicken




Summertime has come to an end but don't put away those grills. This Rhubarb Grilled Chicken is one you will want to try. Rhubarb may be hard to come by at your local grocers this time of year, but if you can get your hands on it, this easy chicken recipe is one you won't be sorry you tried. With it's sweet-tart sauce, Rhubarb Grilled Chicken will become one of your favor ways to grill chicken.

Five easy ingredients and you the makings of mouth-watering grilled chicken:

  • 1 - 4 lb. chicken, cut into serving pieces
  • 1 1/4 lb. rhubarb
  • 1 large onion, chopped
  • 4 tbsp. butter
  • 2 tbsp. sugar

Prepare your grill.

Strip off any leaves from the rhubarb stalks. Slice the rhubarb into chunks and put in saucepan with the onion, butter and sugar. Cook over medium heat for 15 minutes, stirring occasionally. Mixture will thicken. Remove from heat and pour into a bowl and let it cool a bit.

Rinse the chicken pieces and pat dry with paper towels. Sprinkle with salt and pepper.

Add the chicken to the rhubarb sauce and stir. Place a little sauce under the skin.

Place the dark meat on the grill, skin side down and grill for 10 minutes. Add the other pieces, skin side down and grill for 15 minutes longer. Baste chicken while grilling.
