Yuletide Raspberry Linzer Cookies Bars
Yuletide Raspberry Linzer Cookies Bars are an adaption of the Linzertorte, which originated in Linz, Austria. They make delicious and attractive Christmas cookies. Linzer cookies are usually a sandwich cookie recipe with raspberry filling. There is a shape cut out of the top cookie to show off the raspberry filling. Yuletide Raspberry Linzer Cookies Bars are chewy and delicious.
1 1/3 c. butter, softened 3/4 c. sugar 1 egg 1 tsp. grated lemon peel 2 1/2 c. all purpose flour 1 1/2 c. whole almonds, ground 1 tsp. ground cinnamon 3/4 c. raspberry preserves Powdered sugar Preheat oven to 350° F. Grease 13x9 baking pan Beat butter and sugar in large bowl until creamy. Beat in egg and lemon peel. Mix in flour, almonds and cinnamon. Press 2 cups dough into bottom of prepared baking pan. Spread raspberry preserves over top. Press remaining dough, in small amounts at a time, over preserves. Bake for 35 - 40 minutes or until golden brown. Cool in pan in wire rack. Sprinkle with powdered sugar and cut into bars. Makes about 36 bars.
