Quick Coleslaw

My Quick Coleslaw recipe could be called "Fast" food since it takes less than 5 minutes to prepare. But you will have a side of slaw that is more delicious and has less fat than most fast food slaw. Fennel seeds add a distinctive licorice flavor to an otherwise basic recipe.

The dressing for coleslaw is simple and you probably have all the ingredients for it in your pantry and fridge. This recipe uses bagged mix, but I sometimes have cabbage and carrots that I shred and use. This, of course, adds a little more time in preparing my coleslaw recipe.

Whether you use package coleslaw mix or make it fresh, you will find this recipe for Quick Coleslaw delicious.

Quick Coleslaw

  • 1 - 16oz. pkg. cabbage-and-carrot coleslaw
  • 1/3 c. light mayonnaise
  • 3 tbsp. red wine vinegar
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. fennel seeds

Place coleslaw in a serving bowl. Combine mayo and next 3 ingredients in a small bowl, stirring well with a whisk. Spoon dressing over coleslaw and toss well. Sprinkle with fennel seeds. Dover and chill at least 1 hour. Yields 4 servings.
