Potato Salad with Fresh Herbs

Potato Salad with Fresh Herbs is a lot fat recipe that still has a delicious flavor that you will want to add to your recipes. The creamy herb mix has less fat grams than traditional potato salad but still delivers tantilizing tastes to your tastebuds. Luckily I grow my own herbs so I always have them on hand. But you can find fresh herbs at your local grocers that will work just fine for this potato salad recipe. Add this to your picnic or Barbecue and you can expect raves from everyone. The addition of fresh dill and oregano to this potato salad gives it a refreshing taste. Using nonfat plain yogurt and light mayonnaise keeps it on the lite side and you can add it to your healthy recipes. You will need:
- 2 lbs. red skin potatoes, cubed
- 1 can (14 oz.) of fat-free chicken broth
- 2 gloves of garlic, minced
- 1 1/2 tbsp. fresh dill, chopped
- 1 tbsp. fresh oregano, chopped
- 3 tbsp. lite mayo
- 2 tbsp. extra virgin olive oil
- 2 tbsp. white wine vinegar
- salt to taste
Bring to boil the first 3 ingredients with 2 c. water and cook until potatoes are tender. About 20 minutes. Whisk together the yogurt and next 5 ingredients in a large bowl until well mixed. Gently add potatoes to yogurt mixture and cover. Chill up to 12 hours but at least 1.
