Peanut Butter Cutout Cookies
1/2 c. (1 stick) butter 1 c. peanut butter chips 2/3 c. packed light brown sugar 1 egg 3/4 tsp. vanilla extract 1 1/3 c. all-purpose flour 3/4 tsp. baking soda 3/4 c. finely chopped pecans Chocolate chip glaze and peanut butter chip glaze
Chocolate chip glaze1 c. semi-sweet chocolate chips 1 tbsp. shortening (do not use butter or oil) Peanut Butter Chip glaze2/3 c. peanut butter chips 1 tbsp. shortening (do not use butter or oil) In medium saucepan. combine butter and peanut butter chips; cook over low heat, stirring constantly, until melted. Pour into large mixing bowl. Add the brown sugar, egg and vanilla, beating until well blended. Stir in flour, baking soda and pecans. Blend well. Refrigerate 15 to 20 minutes or until firm enough to roll out. Heat oven to 350° F. Roll dough, a small portion at a time, on lightly floured board to 1/4 inch thickness. (Keep remaining dough refrigerated.) Use heart-shaped cookie cutter to cut out cookies. Place on ungreased baking stone. Bake 7 - 8 minutes. Be sure not to over-bake. Cool 1 minute and remove cookies from stone to rack and let cool completely. Drizzle glaze onto each cookie. Chocolate Chip Glaze: In small pan place chocolate chips and shortening. On low heat stir until melted. Peanut Butter Chip Glaze: (follow directions same as Chocolate Chip Glaze) Kids of all ages love to help in the kitchen. This is my grandson, Colton, and daughter-in-law, Alison, cutting out cookies using my holiday recipe for Sugar Cookies.
