Marinated Eye of Round
with Horseradish Sauce


Marinated Eye of Round with Horseradish Sauce makes an eye-catching holiday centerpiece on your dining table. The rich creamy horseradish sauce gives it a nice kick. This is an easy recipe that keeps preparation down to a minimum for the hectic holidays. The crowd will love this roasted Marinated Eye of Round, and can you imagine the great sandwiches you will have with the leftovers (if you have any).

1 - 4 lb. eye of round roast
1 c. soy sauce
1/2 c. vegetable oil
1/4 c. gin
3 cloves garlic, minced
Horseradish Sauce

Marinated Eye of Round Roast

Place roast in an 11x7x1 1/2 inch. baking dish. Combine soy sauce and next 3 ingredients in a bowl. Stir well. Pour marinade mixture over beef. Cover and marinate in refrigerator 8 hours, turning occasionally.

Remove roast from marinade. Place roast on a rack in a roasting pan. Bake at 350° F. for 1 hour or until center temperature is 150° (medium rare). Cool roast and thinly slice. Serve with Horseradish Sauce. Yields 8 - 10 servings.

Horseradish Sauce

1 c. whipping cream, whipped
1 c. mayonnaise
1/4 c. horseradish
1/8 tsp. salt

Combine whipped cream and mayonnaise in a bowl. Mix thoroughly. Fold in horseradish and salt. Yield: 3 1/4 cups.
