I had been looking for a different recipe for Italian Sausage and found this one. It has been a favorite of my kids' for years. When all their friends gather for the big game, they always ask for this recipe. They are easy and delicious.
6 Italian sausage links (4 oz. each)
1 bottle of dark beer
2 c. sliced green peppers
1 c. sliced onion (see hint below)
2 tbsp. olive oil3 tsp. garlic, minced
1/2 c. chopped fresh tomato
3/4 tsp. salt
1/2 tsp. black pepper
6 buns, toasted
6 slices provolone cheese cut in half
Put beer and sausages in saucepan. Bring to a boil, reduce heat, cover and simmer for about 10 minutes or until meat is no longer pink.
While these are cooking, saute green peppers and onion in oil until tender. Add garlic and cook another minute. Add the tomatoes, salt and pepper. Continue cooking until tomatoes are heated.
Drain and discard beer. Grill over medium heat until nicely browned. Serve on buns topped with green peppers and onions.
*For tearless onion slicing, freeze onions for 20 minutes before slicing. Also remember to use a very sharp knife. Save time by slicing extra onions. You can place in a airtight container and freeze up to 3 months.
