Nothings says holiday time like this Holiday Yam Casserole. The cranberries add a little tartness that makes this yam casserole unique. Yams are another holiday food tradition for me. Whether I just bake them in the oven or whip up one of my other yam recipe, they are always on my dinner table during the holidays.
1/2 c. flour
1/2 c. packed brown sugar
1/2 c. rolled oats
1 tsp. cinnamon
1/3 c. pecans1/2 c. miniature marshmellows
2 - 17 oz. can of yams, drained
2 c. cranberries
1/3 c. butter
Heat oven to 350° F.
Combine flour, sugar and oats; cut in butter. Toss 1 cup of the mixture with yams and cranberries. Top with remaining crumb mixture.
Bake for 35 minutes. Sprinkle with marshmellows and place under broiler until golden brown.
