Harvest Apple Salad


Harvest Apple Salad is a festive salad with miniature marshmallows that will please a crowd. This recipe yields enough for 22 servings. I made this walnut and apple salad several years ago to take to a potluck and it was a hit. You, of course, can trim it down to suit your needs. To make my Harvest Apple Salad festive looking I use Red Delicious, Golden Delicious and Granny Smith apples. It's a delicious apple salad that you will want to serve at a family gathering.

9 1/2 c. unpeeled, diced hard apples (Red Delicious, Golden Delicious and Granny Smith)
2 tbsp. lemon juice
1 c.chopped celery
1 c. seedless green grapes, halved
1 c. chopped walnuts
1/2 c. raisins
1 c. mayonnaise
2 tbsp. sugar
1 tsp. lemon juice
1 c. whipping cream
1 c. flaked coconut
1 c. miniature marshmallows

Combine apples and 2 tablespoons lemon juice in a large bowl and toss gently. Add celery, grapes, walnuts and raisins. Set aside.

Combine mayo, sugar and 1 tsp. lemon juice in a medium bowl and stir well. Set aside.

Beat whipping cream until soft peaks form. Gently fold whipped cream into reserved mayo mixture. Add this mixture to the apple mixture and stir gently. Stir in flaked coconut and marshmallows. Cover salad and chill thoroughly.
