Milk Chocolate
Florentine Cookies




Florentine Cookies filled with milk chocolate are sweet and delicate. A perfect Christmas cookie or any special occasion. This is one of my favorite. They're not hard to make and they look great. Add this Milk Chocolate Florentine Cookies recipe to your collection and know you'll have a delicious recipe on hand anytime.

2/3 c. butter
2 c. quick oats
1 c. granulated sugar
2/3 c. all purpose flour
1/4 c. light corn syrup
1/4 c. milk
1 tsp. vanilla extract
1/4 tsp. salt
1 3/4 c. milk chocolate chips

Preheat oven to 375° F. Line baking sheets with parchment paper (This is necessary to remove cookies from pan without breaking them).

Melt butter in saucepan; remove from heat. Add oats, sugar, flour, corn syrup, milk, vanilla and salt. Mix well. Drop by teaspoons onto baking sheets about 3" apart. Spread thinly with rubber spatula.

Bake for 6 - 8 minutes or until they are golden brown. Remove from oven and cool completely on baking sheets on cooling racks. Peel parchment from cookies.

Melt milk chocolate chips in a saucepan over low heat until melted, stirring occasionally. Or you can melt them in your microwave in a bowl. Spread a thin layer of the melted chocolate chips onto flat side of cookies. Do this for half, using the other half as a cover.

Makes about 3 1/2 dozen cookies.
