I bet you have a favorite cookie recipe. Is it an easy peanut butter cookies recipe? Or do you have a favorite chocolate chip cookie recipe?

You'll find several cookie recipes to choose from in my holiday recipes collection. Here's my favorite peanut butter cookie recipe and it's an easy recipe to prepare. This is a very basic peanut butter cookie recipe but why change a good thing. I have added chocolate chips to this easy peanut butter cookies recipe and Scott loves them. He's a chocolate chip cookie lover.

1stick butter (softened)
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 c. peanut butter
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. vanilla
1 1/4 c. flour

Preheat oven to 375 degrees.

Beat butter until soft. Gradually add the sugars to the butter and mix thoroughly. Beat in the egg, peanut butter, salt, baking soda and vanilla. Gradually add the flour, mixing in between. Roll the dough into small balls. Place on baking stone. Press dough balls with a fork dipped in sugar (making the traditional criss cross). Bake for 10 - 12 minutes. If you like chewy cookies go for the lesser time.
Makes about 3 dozen cookies.
