- 4 1/2 to 5 c. all purpose flour
- 1 1/4 c. granulated sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 3 eggs, lightly beaten
- 1 c. milk (I use 2%)
- 1/4 c. canola oil
- 2 tbsp. orange juice
- 4 tsp. grated orange peel
Oil for deep-frying
In a large mixing bowl, combine 4 1/2 c. flour, sugar, baking powder and salt. In a separate bowl, combine the eggs, milk, oil, orange juice and grated peel and stir into the dry ingredients just until moistened. Stir in enough remaining flour to form a soft dough. Cover and refrigerate at least one hour.
Turn onto a floured surface and roll to 1/2" thickness. Using a 2 1/2" doughnut cutter, cut dough.
Using an electric skillet or a deep-fryer, heat oil to 375° F. Fry until golden brown on both sides. Fry a few at a time.
Drain on paper towels. Dust with confectioner's sugar.
Serve and watch them disappear.
