Dill Green Beans


Finding this recipe for Dill Green Beans was a delight. Green beans have always been a staple in our family. I prefer using fresh beans, cooking them for about one-half hour than proceeding with the recipe. Whether you use this recipe on your holiday table or for a side at a regular meal, you will find Dill Green Beans a new and tasty treat for your family and friends.

2 cans french cut green beans or fresh green beans
1 tsp. dillseed
1 tbsp. bacon grease
6 tbsp. butter
6 tbsp. flour
1 c. milk 3 tbsp.
grated onion
Salt and pepper to taste
Dash of hot sauce
1 c. Ritz crackers, crushed

Place the green beans, dillseed and bacon grease in a saucepan and cook until liquid is reduced to 1 cup. Drain and reserve liquid. Place the beans in a casserole. Melt the butter n the saucepan and blend in flour. Stir in reserved bean liquid and milk. Add the onion, salt and pepper and hot sauce, cook until thick. Pour mixture over green beans then cover top with crackers. Bake at 350° F. for 20 - 30 minutes or until liquid sets and cracker top is golden brown.

Make 6 - 8 servings.
