Crunchy Spinach Salad

A salad like this Crunchy Spinach Salad is a fresh addition to your summertime meals. Serve this salad along side a grilled steak and you have the perfect meal. With its its zesty dressing and crunchy ingredients it will become one of your favorite spinach salad recipes.

Start with:

2 qts. fresh torn baby spinach
1 - 16 oz. can bean sprouts, drained or2 c. fresh bean sprouts
1 - 8 oz. can of water chestnuts, sliced and drained
4 hard-boiled eggs, chopped
6 bacon strips, cooked and crumbled
1 small red onion, sliced thin

For Dressing:

1/2 c. packed brown sugar
1/2 c. olive oil
1/3 c. white vinegar
1/3 c. ketchup
1 tbsp. Worcestershire sauce

In a large bowl, combine spinach, bean sprouts, water chestnuts, eggs, bacon and onion.

In a bottle or far, mix all dressing ingredients. Cover and shake until mixed thoroughly. Just before serving, pour dressing over salad and toss. Yields 8 servings.
