Cranberry Salad Mold


Cranberry Salad Mold brings to my mind memories of my childhood holidays. Special care was taken to present a holiday meal that was unforgettable. I don't see people using molds anymore, so this recipe brings back sentimental memories. I don't remember a Thanksgiving or Christmas that didn't include a cranberry recipe. Whether is was fresh cooked sauce or an elaborate mold filled with fruits and nuts. Cranberries are a holiday tradition in my kitchen. Enjoy this Cranberry Salad Mold recipe with your Christmas meal.

4 c. fresh cranberries, 1 lb.
1 c. sugar
1 envelope unflavored gelatin
or cranberry flavored
1/2 c. orange juice

1 c. chopped celery
1 c. chopped Granny Smith apples
1 c. chopped pecans,
optional

Rinse berries. Put through food chopper or food processor using coarse blade. Add sugar and let stand 15 minutes, stirring occasionally. Sprinkle gelatin over orange juice in small saucepan. Place over low heat, stirring until gelatin dissolves. Add gelatin mixture, celery, apples and nuts to cranberries. Mix thoroughly. Place in a 1 quart mold and refrigerate until firm, 6 - 8 hours.
