Cranberry
Holiday Gelatin


Cranberry Holiday Gelatin can double as a dessert, it's so deliciously sweet. Some people may be having sugarplums dancing in their heads, but cranberries are dancing in mine around Christmas time. I search my recipes and cookbooks for different cranberry recipes. This is one of my favorite Holiday Recipes.

2 pkgs. sugar-free cranberry gelatin (0.3 oz. each)
1 c. boiling water
1 - 16 oz.can whole-berry cranberry sauce
1 - 20 oz. can crushed pineapple, drained
4 oz. light cream cheese, softened
4 oz. fat-free cream cheese, softened
1 c. fat-free sour cream
2 tbsp. sugar
1/2 c. chopped walnuts


Cranberry Holiday Gelatin

In a large bowl, combine the gelatin and water. Stir for 2 minutes or until dissolved. Stir in the cranberry sauce, breaking up any clumps. Stir in the pineapple then pour into a shallow dish. Cover and refrigerate fro 2 hours or until firm.

In a medium bowl beat the light cream cheese and fat-free cream cheese until smooth. Beat in the sour cream and sugar. Spread cheese mixture over the gelatin salad and top with walnuts.

Easy as pie.
