Easy Corn Pudding


Corn Pudding is one of family's favorite vegetarian recipes. During the holidays when things are already so hectic, having a recipe for corn pudding that only takes minutes to throw together takes lots of the pressure off the cook. I've tried other recipes and find this one to be the most simple and delicious. My kids love it.

Fresh Corn for Easy Corn Pudding
  • 2 beaten eggs
  • 1/2 c. milk
  • 1/4 c. flour
  • 1/4 c. sugar
  • 1 can cream style corn
  • 1 can whole kernel corn, drained
  • 1/2 stick butter
  • salt and pepper to taste

Spray casserole dish with cooking spray

Mix eggs, milk, flor and sugar. Add both types of corn. Place butter pats on top. Sprinkle with salt and pepper.

Bake at 350° F. for 70 minutes. Yields 8 servings.

Corn Pudding makes a nice side dish for many main courses.
