Coconut Shrimp

You will love this recipe for Coconut Shrimp with it's crunchy coating. It's an easy recipe to prepare and delicious. The cornflake-coconut coating on this appetizer gives it a crunchy texture that the whole family will enjoy. Serve Coconut Shrimp to your husband or boyfriend at that special meal and watch out!   • 1/4 c. fat-free milk
  • 3 tbsp. all purpose flour
  • 24 medium shrimp
    (peeled, deveined and tails left on)
  • 1/2 c. chopped flaked coconut
  • 1/4 c. cornflake crumbs

Preheat oven to 450°F. Spray a 10x15 inch jelly-roll pan with nonstick spray. Whisk the milk and flour together in a large bowl. Add the shrimp; toss to coat. Place the coconut and cornflake crumbs in a zip-lock baggie. Add the shrimp, a few at a time and shake to coat. Place the shrimp on the jelly-roll an in one layer. Lightly spray with nonstick spray. Bake until the shrimp are golden on the outside and opaque in the center; about 5 minutes on each side.
