Coconut Chocolate Chip Cookies are crunchy and filled with candy coated chips that make a colorful Christmas cookie. These coconut filled cookies will become one of your favorite Christmas cookie recipes. Place some on a plate, serve with hot tea or cocoa and you will have faces full of smiles gathering around. Cookie Mix

1 1/4 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 c. packed brown sugar
1/2 c. granulated sugar
1/2 c. red and green mini candy-coated dark chocolate pieces
1 1/4 c. sweetened shredded coconut
1/2 c. quick-cooking oats
1 c. bran flakes, crushed

Combine flour, baking powder, baking soda and salt in medium bowl. Mix well. Pour 3/4 c. flour mixture into a 1-quart wide-mouth jar, with tight fitting lid, and pack tight. Add 1/2 c. brown sugar, remaining flour mixture, remaining 1/4 c. brown sugar, granulated sugar, candies, 1/2 c. coconut, oats, 1/2 c. bran flakes, remaining coconut and remaining bran flakes. Pack each different layer well before adding next layer. Seal jar.

Cover top of jar with fabric. Attach gift tag to jar with raffia or your favorite Christmas ribbon.

Recipe for Coconut Chocolate Chip Cookies

  • 1 jar Coconut Chocolate Chip Cookie Mix
  • 3/4 c. unsalted butter, at room temperature
  • 2 large eggs
  • 1 tsp. vanilla

Line cookie sheets with parchment paper or use baking stones. Pour contents of jar into large bowl, stir well and set aside.

Beat butter in a different large bowl until light and fluffy. Add eggs and vanilla, mixing well. Add dry ingredients and mix by hand only until ingredients are just mixed. Refrigerate dough for 30 - 40 minutes.

Preheat oven to 350° F. and drop cookies by rounded teaspoons about 2" apart on cookie sheets.

Bake 9 - 11 minutes or until edges are browned. (Center will look moist but will set up as cookies cool.) Cool 10 minutes on cookie sheets than transfer to wire racks.

Makes about 6 dozen Coconut Chocolate Chip Cookies.

Coconut Chocolate Chip Cookies and other Christmas Cookies make nice hostess gifts when accompanied with flavored coffees.
