Citrus Chicken
The pink grapefruit topping on Citrus Chicken makes a refreshing dish. Serve it along side buttered, parsley noodles, a side of veggies and you have a meal that everyone will be delighted with. You will be surprised with the fresh new taste that grapefruit adds to this recipe.To make Citrus Chicken> you will need: 1 tbsp. vegetable oil 4 boneless, skinless chicken breasts halves 1 c. orange juice 4 tsp. sugar 1 clove garlic, minced 1 tsp. dried rosemary, crushed 2 tsp. cornstarch 1/4 c. dry white wine 2 pink grapefruits, sectioned and peeled
- Heat oil in large skillet over medium heat. Add chicken; cook 8 minutes or until browned on both sides and no longer pink in center turning after 4 minutes. Remove chicken form skillet; keep warm.
- Add orange juice, sugar, garlic and rosemary to skillet; bring to boil.
- Combine cornstarch and wine. Add to skillet; cook, stirring constantly, until sauce boils and thickens. Season with salt and pepper, if desired.
- Add grapefruit; heat thoroughly, stirring occasionally. Serve over chicken.
