Chicken Thighs with Roasted Apples and Garlic
I have included a recipe for Browned Brussel Sprouts that is delicious with Chicken Thighs with Roasted Apples and Garlic. Add some dinner rolls, a bottle of Sauvignon Blanc and you have a feast. 5 c. tart apples, peeled and chopped 1 tsp. fresh sage, finely chopped 1/4 tsp. ground cinnamon 1/8 tsp. ground nutmeg 6 garlic cloves, chopped 1/2 tsp. salt, divided Cooking spray 8 chicken thigh, skinned 1/4 tsp. ground black pepper
Preheat oven to 475° F. Combine first 5 ingredients. Add 1/4 tsp. salt and toss well to coat. Spread apple mixture on a jelly roll pan coated with cooking spray. Sprinkle chicken with 1/4 tsp. salt and pepper and arrange on top of apple mixture. Bake at 475° for 25 minutes or until chicken is done and apples are tender. Remove chicken from pan but keep warm. Partially mash applemixture with a potato masher and serve with chicken. Yields 4 servings.A couple of hints:
- While oven heats for chicken,
prepare apple mixture and skin chicken thighs
- While chicken roasts,
prepare and cook Brussel sprouts and dinner rolls
Browned Brussel Sprouts Heat 1 tbsp. olive oil in a large nonstick skillet over medium heat. Add 1 1/2 lbs. Brussel sprouts (trimmed and halved), 1/4 tsp. salt and 3 thinley sliced garlic cloves. Cook for 15 minutes or until lightly browned, stirring occasionally. Stir in 2 tsp. balsamic vinegar and cook an additional minute.
