Chicken Enchilada Bake
Chicken recipes don't get much easier than this Chicken Enchilada Bake. With five ingredients and a little prep time you can have this easy chicken recipe on your dinner table in no time flat. Using a pre-prepared rotisserie chicken from your local grocery will cut time preparation time. And they are usually an inexpensive way to use your chicken recipes. - 4 1/2 c. cubed cooked rotisserie chicken
- 1 - 28 oz. can of green enchilada sauce
- 1 1/4 c. sour cream
- 9 corn tortillas (6") cut into 1 1/2" pieces
- 4 c. shredded Monterey Jack cheese
In a greased 13x9 baking dish, layer half of the chicken, enchilada sauce, sour cream, tortillas and cheese. Repeat layers. cover and bake at 375° F. for 40 minutes. Uncover, bake 10 minutes longer or until bubbly. Let stand for 15 minutes before serving.
