Cherry Winks Cookies

This Cherry Winks Cookies recipe is a wonderful and delicious almond flavored cookie recipe that is great used for a Valentines Day treat. The rich creamy, melt in your mouth cookie with the cherry center will keep bringing your family back for more. It's an easy cookie recipe that is quick to prepare. For a variation you can use green Marachino cherries or candy corn (for Halloween). Use your imagination and your holiday cookies are boundless.

I got this cookie recipe from my high school home economics class. So I've had it a few years. The paper the cookie recipe is on may have faded over the years but the cookies still turn out delicious.

• 1 c. shortening
• 1 - 3 oz. pkg. cream cheese
• 1 c. sugar
• 1 tsp. almond extract
• 2 1/2 c. all purpose flour
• 1/4 tsp. baking soda
• 1 1/4 c. finely chopped pecans
• 36 marachino cherries - halved

Cream shortening and cream cheese, gradually add the sugar beating until light and fluffy. Add eggs and almond extract. Beat well. Combine the flour, soda, salt and add to creamed mixture - beat thoroughly.

Chill about 1 hour. Shape dough into 1 inch balls and roll in pecans. Please on baking stone. Put a cherry half into center of each cookie. Bake at 350°F for 12 - 15 minutes.

Yields about 6 dozens cookies.
