Let the sweet and savory flavors in Caribbean Jerk Chicken give you a taste of island cruisine. Let the rice cook while you prepare the chicken and dinner is on your table in about 20 minutes.


To make 4 servings off Caribbean Jerk Chicken:

Season 12 oz. chicken tenderloin strips with...

Caribbean Jerk (recipe below) and let sit in refrigerator for about 1 hour...

In a large, nonstick skillet heat...

1 tsp. cooking oil

Cook chicken in hot oil for 3 - 4 minutes or until done and browned nicely.

1 med. sweet potato, peeled, halved lengthwise, and thinly sliced
1 small banana pepper, seeded and chopped

Cook and stir 5 - 6 minutes more.

In a small bowl stir together...

3/4 c. unsweetened pineapple juice
1 tsp. cornstarch

Add to skillet. Cook, stirring until bubbly.

2 unripe bananas, quartered lengthwise and cut into 3/4" pieces

Cook and stir for 2 minutes more. Serve over steamed brown rice

Makes 1/2 cup.

2 tbsp. light brown sugar
1 tbsp. granulated garlic (or garlic powder)
2 tbsp. paprika
2 tsp. ground allspice
2 tsp. black pepper
1 tsp. kosher salt
2 tsp. ground ginger
1 tsp. onion powder
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1 tsp. red pepper flakes
1 tsp. dry mustard
