Broccoli Cheese Pie


Looking for a meatless dish that has great flavor, this Broccoli Cheese Pie is sure to be a hit. This vegetarian recipe with it's unique macaroni crust filled with broccoli and cheddar cheese will become a favorite recipe. Served with a salad and crusty bread this will make a hearty meal.

You will need:

  • 6 c. water
  • 1 tsp. salt
  • 3 oz. (about 3/4 c.) uncooked macaroni rings
  • 1 egg yolk
  • 1 tbsp. snipped chives
  • 1 c. cheddar cheese, shredded
  • 1 - 10 oz. pkg. frozen chopped broccoli, fresh is best
  • 1/2 tsp. salt
  • 4 eggs
  • 1 egg white
  • 1 c. creamed cottage cheese
  • 1 tbsp. snipped chives
  • 1 tsp. salt
  • Paprika

Heat oven to 375° F. Heat water and 1 tsp. salt to boiling then stir in macaroni. Boil until tender. Drain and rinse in cold water.

Beat egg yolk; stir in macaroni and 1 tbsp. chives. Press mixture against the bottom and sides of greased 9" pie plate with back of spoon. Bake 10 minutes. Cool for 10 minutes.

Increase oven temperature to 425° F. Sprinkle cheddar cheese over crust. Prepare broccoli as directed on package, using 1/2 tsp. salt. Drain the broccoli well. Arrange broccoli on cheese. Beat together eggs, egg white, cottage cheese, 1 tbsp. chives and 1 tsp. salt. Pour over broccoli. Sprinkle with paprika.

Bake uncovered 15 minutes. Reduce oven heat to 300° F. and bake until knife comes out clean, about 30 minutes. Cool minutes before serving. Makes 6 servings.
