Beef Stroganoff

In a large resealable plastic bag, combine 2 tbsp. flour and salt. Add sirloin beef strips (a few at a time) and shake to coat. In a large skillet over medium-high heat, brown beef in 2 tbsp. butter. Add mushrooms and onion, cook and stir until tender. Add garlic. Cook about 1 minute longer. Remove from heat and keep warm. In the same skillet, melt remaining butter. Stir in tomato paste and remaining flour. Stir until smooth. Gradually add broth and bring to a boil. Cook and stir for 2 minutes for until thickened. Return sirloin beef strips mixture to the pan. Add sour cream and sherry. Heat thoroughly but don't boil. Serve over egg noodles or rice.
